Spinach and Scallop Curry
Prep Time: 10 minutes, Cook Time: 10 minutes, Servings: 4
Ingredients:
1/2 cup fat-free plain yogurt
1/4 cup chicken broth, reduced sodium
4 green onions, chopped
2 teaspoons fresh ginger root, minced
2 teaspoons curry powder
2 teaspoons garlic, minced
1 1/2 pound sea scallop
2 cups baby spinach greens, coarsely chopped
1 small tomato, diced
2 cups instant brown rice, cooked
